- Flakes
All our flakes are very finely grated chocolate so the appearance is more like a powder. Makes it easiest to use by baristas in cafes. São Tomé and Principe are volcanic islands off the coast of West Africa in the Gulf of Guinea. For our São Tomé hot chocolate flakes, we use cocoa beans from Diogo Vaz or Satocao to get a distinctive, delicious flavour. Cocoa varieties include Amelonado that has a particularly soft and fruity taste. Beans are wrapped in banana leaves for fermentation and dried in the sun. Perfect for garnishing cappuccinos and mochas. These chocolate flakes can also be made at home in all automatic milk frothers including the velvetiser.
